Lago di Garda : Gastronomia

La carne del Garda trentino. La cucina del Garda trentino è largamente influenzata dalla gastronomia montana . L’entroterra alpino ha sempre fornito di una varietà di piatti a base di carne, burro , formaggi e funghi, oltre alla varietà di erbe e aromi d’alta quota. I menù tradizionali sono quasi tutti a base di carni lesse o arrosto: dalla carne di manzo a quella di maiale, dalle carni bianche alla selvaggina . L’impronta e quella delle corti italiane, basti pensare al vescovato di Trento o a quelle asburgiche, basate sulla tradizione d’oltralpe . La varietà è vasta . I piatti variano dagli spezzatini al gulasch, dal coniglio con sughi alla selvaggina con funghi e polenta .I “pastelli” di carne mista con salse e “peverada”, pan trito ribollito con pepe e olio di oliva extra vergine, e per finire spiedi ed arrosti con contorno di patate arrosto . Ma il piatto forte è costituito dalla carne salada .

La ricetta è molto semplice ma da prepararsi con estrema cura .

Prendere alcuni chili di fesa di manzo. Togliere i grasselli e tagliarla a pezzi di 800 gr . circa, preparare un contenitore di vetro oppure di ceramica alto circa 15 cm . Sul fondo cospargere abbondantemente alloro, spicchi di aglio, pepe in grani e sale marino grosso .

Disporre i pezzi di manzo accostandoli senza lasciare troppo spazio, ricoprire abbondantemente con alloro, spicchi di aglio, pepe in grani e sale marino . Chiudere con un tagliere di legno e riporre un peso affinché la carne si schiacci . Lasciare il manzo per circa venti giorni a riposo .

Durante questo periodo gli aromi e il sale estrarranno l’acqua dalla carne aromatizzandola, controllare che l’infusione sia omogenea e che non restino macchie . Alla fine tagliare la carne a fette sottili, batterla per sfibrarla e cuocerla su piastra rovente .

Servire la carne calda condita con ottimo olio di oliva extravergine con contorni di fagioli lessati conditi e sottaceti .

Carne Salada – Salted meat – The dishes from the Trentino area of Lake Garda is chiefly influenced by Alpine cuisine. The inland mountain area has always provided a variety of dishes made of meat, butter, cheese and mushrooms, as well as an assortment of mountain herbs and seasoning. Nearly all traditional menus feature a variety of boiled or roasted meats ranging from beef to pork, and from poultry to wild game. The cuisine was greatly influenced by the Italian and Hapsburg courts (and the Bishop’s See in Trent), which introduced their traditional dishes. The assortment is vast: dishes range from stews to goulash, from rabbit stewe to wild game served with mushrooms and polenta, from “pastelli” made of meat with sauce and “peverada”, bread cubes cooked with pepper and extra-virgin olive oil, to shish kabobs and roasted meat and potatoes. The most famous dish is carne salada [salted meat].

The recipe is quite simple, but it must be very carefully prepared.
Take several kilos of beef. Remove the fat and cut the beef in slices about 800 g each. Prepare a glass or ceramic jar about 15 cm tall. Place a generous amount of laurel leaves, garlic cloves, pepper corns and rock salt on the bottom of the jar. Neatly arrange the beef slices and cover with a generous amount of laurel leaves, garlic cloves, pepper corns and rock salt. Cover with a wooden carving board and place a weight on top to press the meat. Let the beef rest for about twenty days.

During this period, the aromas and salt will extract the water from the meat and season it. Make sure the infusion is homogeneous and there are no spots. Afterwards, thinly slice the beef, pound it to tenderize it and cook on a hot grill. Season the meat with extra-virgin olive oil and serve with boiled beans and pickled vegetables.

Pesci e vini del Garda: Abbinamenti… con qualche trasgressione – Soggiornare sul Garda senza accostarsi ai suoi sapori più tipici vuol dire privarsi d’una opportunità di conoscere nella sua interezza ciò che il territorio sa offrire rendendo speciale una permanenza breve o prolungata nel tempo. Al piacere che sa dare il godere dei luoghi, si abbina il piacere del sedere a tavola a gustare le proposte d’una fresca cucina estiva che ha nel pesce di lago il protagonista indiscusso. Una ristorazione che s’è fatta attenta ed è divenuta consapevole di possedere un patrimonio ricco, ancora forse non per molto, di varietà ittiche, alcune uniche, come l’insuperabile carpione, e di tradizionali ricette da rivisitare e riproporre, ha riaperto un capitolo che sembrava chiuso ed ormai tramontato, per offrire menù di pesce di lago tanto intriganti ed invitanti da far venire l’acquolina in bocca al solo atto del leggerli. Ma ha un fascino anche l’approfittare della vacanza per una alzata mattiniera e scendere al porto ad attendere il rientro dei pochi pescatori professionisti oramai rimasti ed assicurarsi così il pesce freschissimo, appena pescato, da cucinarsi per il piacere della famiglia e degli amici. E può essere trota o lavarello, sardina o luccio, pesce persico o anguilla, tinca, carpa o cavedano, bottatrice o barbo, raro carpione o introvabili alborelle. Da cucinare nelle maniere più semplici, quelle che esaltano le qualità e le caratteristiche del pesce e, con pochi sapori: un po’ di prezzemolo, una leggera salsina, un po’ d’aglio e del buon olio extravergine d’oliva del Garda, riescono ad esprimersi in piatti gustosi. E allora, se alla trota e al lavarello s’adattano tutti i modi di cottura, ( ma meglio quella alla griglia), il luccio predilige la cottura in bianco, bollito; il pesce persico filettato, al burro o fritto; la tinca in umido, al forno o con il risotto; il cavedano fritto a tranci, ai ferri, così come le sardine.

E le aole, se ancora si è fortunati a trovarne, sono aperitivo superbo se fritte, mentre il rarissimo carpione è eccellente sia bollito che ai ferri. L’importante è assicurarsi che si tratti di pesce fresco, e a questo proposito, due indirizzi per andare a colpo sicuro, se non si conosce qualche pescatore: a Garda il negozio “La Pescheria” (via Antiche Mura, 8 – tel. 045 6270545) della Cooperativa fra Pescatori, che il pesce lo propone fresco, ma anche lavorato, affumicato o in deliziosi e delicati tortellini; a Desenzano la “Pescheria Cavallaro” (via Stretta Castello, 19 – tel 030 9142495). Per chi invece preferisce sedersi a tavola e farselo servire, il pesce già cucinato, una meta sicura: l’Osteria al Pescatore a Castelletto di Brenzone ( via imbarcadero, 31 tel 045 7430702) accolti con cordialità da Livio e Rosaria che oltre a cucinarvelo, sanno anche appassionarvi ai piatti di lago ed al “Garda in pentola”. Proponendolo con sicuri abbinamenti, perché se è vero che il pesce vive nell’acqua, nei suoi ultimi attimi d’esistenza ama accompagnarsi a dei buoni vini, meglio ancora se eccellenti, come quelli gardesani o dei vicini territori, e se il vino bianco è quello più gettonato, non meno adatto ne è il chiaretto. Ma anche un rosso giovane, fresco e giustamente sapido può egregiamente accompagnarsi a un piatto di pesce in umido proposto con salse piccanti, molto saporite e speziate.
Poi, buon senso… e fantasia possono suggerire intriganti trasgressioni.

Filetti di persico fritti

Ingredienti: quattro persici di circa 250 gr. L’uno; olio extravergine di oliva, farina bianca, sale ( se si preferisce l’impanatura: un uovo e del pangrattato).
Si tratta di una ricetta tradizionale e facile che richiede dieci minuti per la preparazione e cinque per la cottura.
Sfilettare i pesci, infarinare leggermente i filetti e friggere in olio extravergine di oliva bollente, dorando per bene da ambo le parti.
Salare e servire ben caldi.

Sardine olio prezzemolo e aglio
Ingredienti: dodici sardine, un ciuffo di prezzemolo, uno spicchio di aglio, un limone, un bicchiere di olio extravergine di oliva.
Ricetta facile che richiede dieci minuti per la preparazione e dieci minuti per la cottura.
Cuocere le sardine sulla griglia o ai ferri.
Aprirle, diliscarle e disporle su un piatto di portata.
Salare e cospargere con la salsa ottenuta amalgamando a freddo in una terrina il battuto di prezzemolo e aglio, il limone spremuto e l’olio extravergine d’oliva.
Ottime come antipasto.

The fish and wines of lake Garda: Combinations… And something out of the ordinary – Staying on Lake Garda without enjoying its distinctive fl avours means missing an opportunity to discover everything the area has to offer, and making any length of stay that little bit more special. The pleasure of visiting new places is combined with that of sitting down at a table to enjoy fresh summer dishes, where fish from the lake reins supreme. Restaurateurs are becoming increasingly aware that they are surrounded (for the time being at least) by an abundance of varieties of fish, some unique, such as the unequalled salmon carp, and traditional recipes to reinvent and repropose. They have reopened a chapter that seemed closed and now offer fish menus so intriguing and inviting as to make your mouth water just to read them. It is also an exciting part of the holiday to rise with the birds and stroll down to the harbour to await the return of the handful of professional fishermen still in existence and grab the best of the freshlycaught fish for dinner with family and friends. It could trout or whitefish, sardine or pike, perch or eel, tench, carp or chub, burbot or barbel, a rare salmon carp or even rarer alborella (Alburnus alborella). All should be cooked as simply as possible, to enhance the quality and features of the fish and with delicate fl avouring – a sprinkling of parsley, a light sauce, or a little garlic and extravirgin olive oil from the lake. A delicious result is guaranteed. Trout and whitefish can be cooked in a variety of ways, but are best grilled; pike prefers to be boiled; perch should be filleted and fried in butte;, tench can be stewed or baked or put in a risotto; chub is delicious fried in slices or grilled, and the same goes for sardines. And aole (a kind of sardine) – if you are lucky enough to find any – are superb as an appetizer, fried, and the elusive salmon carp is exquisite both boiled and grilled. What matters most is that the fish is really fresh. So if you have not yet befriended a fisherman, here are two addresses where you can’t go wrong: La Pescheria fishmongers (8, Via Antiche Mura, tel. 045 6270545) in Garda, which belongs to the Fishermen’s Cooperative and also sells processed or smoked fish and even tortellini with delicious fish filling, and Pescheria Cavallaro (19, Via Stretta Castello, tel. 030 9142495) in Desenzano.

For those who prefer to sit down in comfort and be served freshlycooked fish, a safe bet is Osteria al Pescatore in Castelletto di Brenzone (31, Via imbarcadero, tel. 045 7430702) where friendly hosts Livio and Rosaria will treat you to one of their specialities taken from their recipe book Il Garda in Pentola. Whatever the recipe, however, the accompanying wine is all important. While it is true that fish lives in the water, it likes to be served with a good, if not excellent, locallymade wine. And while white is the usual choice, no less suitable is a fine chiaretto. Even a tasty young red wine, served at the right temperature, is a good accompaniment for fish stewed in a spicy hot sauce. And anyone gifted with good sense – and a vivid imagination – can come up with something truly out of the ordinary.

Fried fillet of perch
Ingredients: one 250g perch per person, extravirgin olive oil, plain fl our, salt (and one egg and breadcrumbs if desired).
This easy traditional recipe takes ten minutes to prepare and five to cook.
Fillet the fish, coat the fillets lightly in fl our and fry in boiling olive oil until golden brown on both sides.
Sprinkle with salt and serve hot.

Sardines with oil, parsley and garlic sauce
Ingredients: twelve sardines, a little chopped parsley, one clove of garlic, one lemon, one small glass of extravirgin olive oil.
This easy recipe takes ten minutes to prepare and ten minutes to cook.
Grill the sardines. Meanwhile, mix the chopped parsley and garlic, lemon juice and oil in a bowl.
Open up the fish, remove the bones and arrange on a serving dish.
Sprinkle with salt and pour over the sauce.
Excellent as a starter.
